Founder's Select Geisha: Why It’s So Special

A varietal that changed how the world tastes coffee

Geisha (also spelled Gesha) is one of the most celebrated coffee varietals in the world, known for redefining what coffee can be. First collected in Ethiopia, Geisha remained relatively obscure for decades before gaining global recognition for its extraordinary cup quality. Today, it’s often associated with some of the most memorable and expressive cups in specialty coffee.

An unmistakable cup profile

What sets Geisha apart is its aromatic intensity and elegance. Rather than leaning toward heavy body or bold roast flavors, Geisha typically shines through floral aromatics, bright fruit, and a tea-like clarity. Notes of cane sugar, honeysuckle, citrus, and stone fruit are common, with a sweetness that lingers long after each sip. It’s a coffee that evolves as it cools, revealing new layers over time.

A challenging coffee to grow

Part of Geisha’s mystique comes from how demanding it is to produce well. The plants tend to have lower yields and require careful attention throughout the growing season. Selective harvesting is essential, and the margin for error during processing is small. These challenges make high-quality Geisha naturally rare and help explain why exceptional lots are so highly prized.

Why origin matters with Geisha

Because Geisha is so transparent in the cup, its growing environment matters immensely. Elevation, shade, soil health, and processing precision all play a major role in how the final coffee expresses itself. When these elements are aligned, Geisha becomes less about intensity and more about balance, nuance, and clarity.

La Hammonia at Selva Negra

For this Founder’s Select, we sourced our Geisha from La Hammonia, a historic farm located within Selva Negra Coffee Estate in the mountains near Matagalpa, Nicaragua. The farm was restored in the 1970s with a long-term vision focused on sustainability, conservation, and producing exceptional coffee.

Shade-grown, forest-connected farming

La Hammonia is surrounded by forest and cultivated under shade, creating an environment that supports biodiversity while also benefiting coffee quality. Shade-grown conditions slow cherry maturation, often contributing to increased sweetness and complexity. This type of ecosystem-driven farming is especially well suited for expressive varietals like Geisha.

A commitment to careful processing

Selva Negra’s approach to quality extends beyond the field. With both wet and dry mills on site, coffee from La Hammonia is handled with precision from harvest through export. Coffee byproducts are reused as compost and fuel, supporting a closed-loop system that prioritizes soil health and environmental responsibility alongside quality.

How that care shows up in the cup

The result is a Geisha that feels refined and intentional. Expect lifted florals on the nose, gentle fruit and cane sugar sweetness through the sip, and a clean, graceful finish. This is a coffee that rewards slow brewing and mindful tasting, opening up more fully as it cools.
