Sourced from a vibrant network of smallholder farmers in Mexico’s southernmost state, this Chiapas offering reflects the region’s deep-rooted coffee tradition. Grown along the Sierra Madre de Chiapas at 1,200-1,600 meters, these farms thrive under steady rainfall, fertile volcanic soils, and the shade of dense forest canopies--conditions that consistently produce some of Mexico’s most notable coffees.
Bordering Guatemala’s Huehuetenango, Chiapas shares a similar cup pedigree: chocolate-forward with balanced sweetness and gentle fruit complexity. Farmers here continue the traditional washed process: pulping, fermenting, and rinsing ripe cherries before drying them on patios or raised beds to enhance clarity, sweetness, and structure in the final cup.
